Watermelon Rose Jar Granitas

Some of my favorite summer memories involve outdoor dining, loved ones and cold watermelon. While I love slices of this refreshing fruit, I also like to get creative with how to prepare it.The best thing about watermelon is its versatility. It is not only perfect served by itself but it can also become a show stopper when paired with other ingredients. Salads, cold soups, kebabs-- watermelons can easily find a home in many recipes. One of my favorite summertime drinks that everyone in the family can enjoy is Watermelon Rose Jar Granitas. This drink is quick to prepare, make ahead friendly and deliciously memorable.

Ingredients

Serves 4-6

 - 4 cups of fresh watermelon juice (about 6 cups of cut watermelon, that's been juiced)

 - 1/3 cup plus 1 tablespoon of rose simple syrup (see below for recipe)

 - juice of 1 ½ limes

 - mint for topping

Rose Simple Syrup

 - 1 cup water

 - 1 cup sugar

 - 1/2 teaspoon rose water

Step 1.0

Place water, sugar and rose water in a small saucepan. Heat until the sugar is dissolved. Remove from the heat and let cool. Pour the syrup into an airtight container and store in the fridge.

Step 2.0

Pour fresh watermelon juice, rose simple syrup, and lime juice into a pitcher and stir to combine. 

Step 3.0

Fill mason jars with the mixture and seal tightly with the lid. Place in the freezer, and every 45 minutes shake. Continue this process until the juice has turned into a slush consistency.

Step 4.0

Serve the jars with straws and top with fresh mint.
